Soft sweet milk bread

This bread is soft, sweet, and delicious! This bread was inspired from my experience eating soft sweet japanese bread. I used a chinese method to make the flour paste. This helps the bread be soft!

Ingredients:

  • 5 cups bread flour
  • 1 cup sugar
  • 2 packages of instant yeast
  • 1 cup milk
  • 1 cup water
  • 1/3 cup bread flour
  • 2 eggs
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 stick butter, softened and cut up in slices

Step 1

  1. Add 1 cup water and 1/3 cup of bread flour to a sauce pan. Mix on medium heat until it forms a thick paste.
  2. Remove and set aside to cool

Step 2

  1. In a mixer, mix 5 cups flour, sugar, yeast, and salt together.
  2. Mix wet ingredients together: 1 cup milk, 1 tsp vanilla extract, 2 eggs, the flour paste from step 1.
  3. Make a well in the mixer and add the wet ingredients to the dry ingredients.
  4. Using the bread/kneading hook, knead until smooth.
  5. Add the softened butter one at a time.
  6. Knead for 20 minutes or until the dough is elastic and smooth.
  7. Set in a dry place and let it rise until double in size.

Step 3

  • Shape the dough into any shape you like.
  • Mix 1 egg white with 2 tbsp of water.
  • Brush onto the buns before baking.
  • Bake for 10-13 minutes on 350 degree oven OR until the top is golden brown.
  • Do not overbake, it will make your bread hard.
  • Remove and let cool.
  • Enjoy!

I believe it is 1/2 cup butter is equivalent to 1 stick butter.

Hi for those with just a mixer, only put half the flour in and mix 20 min. your mixer won't be hurt. add the rest of the flour and knead with your hands for 5 minutes. check for elasticity. no mixer, I saw a young chef at cooking shooking smeer dough on the counter for 20 minutes scraping it periodically with a dough scraper- very similar recipe but without the roux.(flour and water mix). Great recipe

I made these by hand, and they were awesome! I ended up kneading it for 30-40 minutes just to be sure it was elastic enough, since I know that the dough hook does a faster job. The dough is very sticky and makes it a challenge to knead, but I tried not to incorporate too much flour into it. I decided to have a little fun by braiding them first, bringing the end around to form a ball, and then tucking it underneath - it was a lovely shape! They were sooooo delicous! Just sweet enough, soft on the inside, and pulls apart easily - kind of reminded me of Hawaiian bread. Great with a cold glass of milk when they are warm, and with a cup of hot coffee when they cool down. Annie, thank you so much for the recipe! I'll be making a bunch for my sister-in-law's baby shower!

First time making this, what did i do wrong?Why is my dough so sticky after it proof? I can't shape it. Should I add more flour?

If the dough is too sticky, add more flour to your hands to shape them.

Can you use all purpose flour? 

Yes you can but it will be slightly different.

Hi Lula, it doesn't make a lot. I'd say probably a little more than a loaf.

HI, Want to try this recipe, but i dont have bread flour, can i use all purpose flour instead? How many cups?  Thank you..

All purpose flour will be okay, but the finished result won't be as fluffy as bread flour.

When did you put the table spoon of salt in? I follow your video and you didn't add the salt.

You can add it any time with the dry ingredients.

Dear Annie the rolls turned out great. Turned the same dough into a Pullman. The bread was soft but the colour of the loaf was not white. It was slightly off-white I.e cream coloured. Please help.

What is bread flour? Is it ok to add wheat gluten or dough enhancer to all purpose flour to turn it I to bread flour. If yes then how much. Thanks
